Today's Harvest

Had a good day in the garden.  The tomatoes are finally starting to ripen.  Looks like more Zucchini Bread on the horizon.  I don't like my zucchini to get as large as the one in the picture.  I obviously missed it in the garden and it grow larger than I like.  I have tons of peppers that I need to get to this evening.  My pole beans are progressing, but they're a little behind.  I had to plant them 4 times because the groundhogs ate them down to the ground.  Hopefully they will take off and produce a few beans for canning.

I'll make a squash and zucchini casserole for dinner this evening and Blanche and freeze the remainder for baby food for new grand baby who's on the way.  We'll slice the tomatoes for lunch or dinner this week.  Need to get my canner ready,  lol.  They're coming faster than we can eat them.

What did you harvest this week?  Leave me a comment and I'll come over and check it out.

  2. We have been canning cucumbers this past week. Harvest is coming. Here in upstate NY we won't have tomatoes for a little bit, they are just turning red. I grow mostly roma style and they take a little longer to turn. I don't grow zucchini as a neighborhood service. I take the zucchinis after everyone else has had their fill!. Everything at your place looks great.

  3. Hello, since you stopped by my blog I of course had to check yours out and I am very happy that I did. Both the salsa and and corn bread look great! Hey have you canned anything on your smooth top yet? I have one too and use a ceramic water bath to can. It has left a few scratches, but no cracks yet.I'm still afraid to use a pressure canner on it though!

  4. One green pepper for pizza, two eggs from the hens that are just starting to lay. It was an abundant day. Your harvest is awesome. I did buy one of those canning jars that has a gasket and a glass clap down lid so that I do refrigerator pickles. The new baby will be well-fed.

  5. @Mrs. Pickles - I haven't used my canner yet. I have a flat bottom Bar Elite that I plan to use. I won't be using a pressure canner. Too afraid to take chance. What type of canner are using? Hoping that I don't end up with scratches. I'm actually considering an electric water bath canner suggested by Gingerbread's House. I found one, it's pricey but may be worth in the money in the end.

  6. Rhonda, your first veggie garden is such a success. Your harvest looks great. I enjoyed catching up on your blog. Have you used your new canner yet? I have the same problem. I have the same canner, but have not been brave enough to use it on my cooktop. We had a large propane burner we use for crabbing when we go camping, so I started using that out on the screen porch. I like it so much, as it keeps the heating process of the canning out of the house. It has worked great for me, as least with water bath canning. This season perhaps I will get brave enough to use the cooktop.

    Great work on that garden!
